One of my favorite blogs I have found since I started reading about THM is by Briana Thomas. This amazing 19 year old young lady has incredibly inspirational recipes. The one I want to talk about today is the dessert I made to celebrate Valetines Day. It is a double layer of chocolate cake, with a layer of mocha mousse in between, and mocha fudge icing! Now, if you don't believe me, just ask my mom, I would never have thought I would actually be recommending a white flour-less, sugar free cake, but this one isn't bad! Actually, I think it grows on you! A tall glass of milk with a thick slice of cold cake out of the fridge, Mmmm! Here are the pictures of the one I made, heart shaped of course ;)
Here is Briana's recipe; She is a photographer, also, so her pictures are much better too! Mocha Chocolate Cake. I followed her recipe exactly, except the only thing I did differently is I used the mocha frosting that she linked to instead of the lightened up version, because it was Valentines Day after all! The other thing I have learned with working with Stevia and these recipes is that my prefered sweetness is way sweeter than other people, so you will probably have to figure that out for yourself. Most people will caution you though, that if you add too much stevia it might cause it to be bitter, although I haven't ran into that issue yet. I think next time, I'm going to try cup cakes. I'm thinking about piping in the filling after baking them...that will be fun :)
